Guys! September is almost here! You know what that means...all the summer food RIGHT now! Time for that end of summer get together you've been meaning to have before all the leaves start turning glorious shades of orange and red. Light up the coals because it's time to get grilling!
SO! What to eat, what to eat....Not sure what to make for this fabulous extravaganza of yours? Have no fear! I've complied my favorite recipes from this summer to help you out.
And without further ado...ONWARD!
1. Blue Cheese Burgers with Caramelized Onion and Arugula
A big, juicy, cheesy burger for the entrée. Yessss. Obviously. Meat. So. Let's add blue cheese, freshly made caramelized onions, and arugula for a little peppery flavor. Done and done.
2. Deliciously Perfect Deviled Eggs
Appetizers! Yes! Basically any time I have any gathering over a meal, I make these little puppies. Gotta have them. They're always gone with minutes. I also eat 5 or so before I even serve them. Soooo you should too 🙂
3. Fresh Dill and Red Potato Salad
POTATOES! YES PLEASE! Potato salad is pretty much THE staple for a BBQ, summer picnic, grill out, what have you. This recipe adds a little more flavor with fresh dill and a dollop of coarse ground dijon mustard. Also, no need to peel red potatoes! Easy peez and delicious.
4. Crispy (and Healthy!) Baked Kale Chips
A great alternative to that bowl of ruffles you end up eating half of (or is that just me? *sigh*). Also, these days, kale is a thing. Rightly so. Why do I agree? Pretty much because of this recipe. They're just so yummmmm. This kale chip recipe comes with a few handy tips and tricks to make them perfectly crunchy and wonderfully seasoned so head on over and those greasy potato chips will become a thing of the past!
Necessary. I mean really. Corn on the cob is a must at any BBQ, or honestly at any other type of summer function with food. This dish is actually an ingredient within my Grilled Corn and Black Bean Tacos recipe but it's so delicious and easy to cook that it's also for perfect for basic corn on the cob .
6. Basil Watermelon and Goat Cheese Salad
Another necessary side dish. Watermelon. But why not give it a little more oomph?? This recipe adds a little goat cheese, some thinly sliced basil aaaaand....that's it! Done. Always a big hit at our summer dinners.
7. Mixed Berry and Greens Salad
Gotta through those mixed greens in there somewhere. It's always nice to have a an actual lettuce salad alongside those burgers and potates. Not only does it add wonderful color, but you get to feel super healthy and snazzy about yourself. With fresh tasting and light ingredients, this recipe is a great addition to a summer meal. Although titled "spring" mixed berry salad, switch out any berries not in season for the ones that look amazing and voila! "Summer" mixed berry salad 🙂
8. Summer Berries with Limoncello Whipped Cream
Speaking of berries, the EASIEST dessert ever with no cooking. Shall I repeat? No cooking. Easy, fresh, and delicious. Plus there's Limoncello in the whipped cream. Do it.
9. Individual, Single Serving Peach Crisps
Can't forget peach crisp! The ultimate summer dessert. This recipe breaks it down into individual servings sure to impress your guests. Oh you wanted a slice? Please. Here's your own personal peach crisp in an adorable bowl. All to yourself. Enjoy.
10. Sparkling Raspberry Lemon Mimosas
Gotta have a drink! Luckily for us, our garden contains an everbearing raspberry bush, meaning it provides us fabulous fruit during both spring AND summer! Plus the raspberries still look amazing at the market. No better way to celebrate the end of a fantastic season than with a little champagne and summer fruit!
