Description

Looking for a quick and easy-to-make side dish for your next taco night or burrito bowl? This fluffy and flavorful cilantro lime rice recipe takes just 20 minutes to make from start to finish!


Ingredients

  • 2 cups jasmine rice
  • 3 cups water
  • 2 tablespoons lime zest
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 cup fresh cilantro, roughly chopped
  • Coarse salt to taste


Instructions

  1. Rinse jasmine rice with water and drain fully.
  2. Add the rinsed rice into a large sauce pan. Pour in water and lime juice and bring to a boil. Once boiling, cover and reduce heat to low. Simmer for about 10 to 15 minutes, until rice is tender and water has been absorbed.
  3. Remove from heat, add lime zest, and cilantro. Fluff with a fork. Add salt to taste.

Notes

Store in an airtight container up to 3 days in the fridge and up to 3 months in the freezer.
