Description

Looking for a simple and mouth-watering dessert to enjoy during the hot summer months? Try these grilled peaches with vanilla ice cream, a sweet and refreshing treat that can be ready in just a few minutes! Super customizable, they’ll surely be a hit at your next BBQ or outdoor gathering.


Ingredients

  • 2 large, ripe peaches - I used freestone peaches but clingstone will also work!
  • 2 tablespoons extra virgin olive oil, for brushing
  • Store bought or homemade vanilla ice cream
  • Store bought or homemade caramel sauce, for drizzling*
  • Fresh mint, roughly minced
  • Roasted pistachios, roughly chopped
  • Finishing salt


Instructions

  1. Halve and pit the peaches: Cut along the seam of each peach from stem to end, then twist the halves apart. If the pit is still stuck in one half after twisting the peach apart, use a sharp knife to cut around the pit and then pop it out with a spoon.
  2. Preheat a grill or heat a grill pan over medium high heat. While heating, lightly brush the top of each peach half with a little olive oil. 
  3. Place peach halves face down on the grill and cook 4 to 5 minutes until grill marks have formed and are slightly softened. Flip and repeat, cooking for 3 to 4 minutes. Remove from heat. 
  4. Once cool enough to handle (but still warm!) plate peaches as desired. Top each one with a scoop of vanilla ice cream and drizzle with the caramel sauce. Sprinkle with pistachios, fresh mint, and a pinch of finishing salt if using. Enjoy immediately!

Notes

I like to use my homemade salted caramel sauce but regular caramel sauce is also delicious!
